Slow Cooker Beef Stew
Ingredients:
1.5-2 lbs stew beef (roughly chopped into 1 inch cubes)
1 lb potatoes (chopped into bite size pieces)
1 lb carrots (peeled and chopped into bite size pieces)
1 yellow onion (diced)
6 garlic cloves (minced or crushed)
6 oz tomato paste
1.5 tbsp tamari soy sauce or coconut aminos
1 tsp salt
1 tsp pepper
3 cups beef broth
1 cup frozen peas (optional)
Instructions:
Place all of the ingredients into the slow cooker, except for the peas, stir to combine
Cook on high for 3-4 hours, or on low for 6-7 hours
In the last 30 minutes of cooking, add the frozen peas, and stir to mix into the stew
Add any additional salt to taste
